Roasted Purple Cabbage
Ingredients:

- 4 cups (300g) finely shredded purple cabbage
- 3 Tbsp extra-virgin olive oil
- Kosher salt
Instructions
Preheat your oven to 425°F. Line two baking sheets with parchment paper. Put the cabbage on the prepared baking sheet, drizzle with 2 Tbsp of the olive oil, sprinkle with with ½ tsp of salt, and use yours hands to toss everything together. Spread the cabbage onto the the baking sheets in thin layers. Roast the cabbage longer than you think you should, stirring it every so often, until it's quite shriveled and crispy and on the very thin line of being dark purple and burnt, about 30 minutes.

Roasting purple cabbage changes the flavor completely. Purple cabbage by itself has a bitter peppery flavor. When purple cabbage cooks it becomes sweeter.
