Roasted Radishes with Chive Butter
It's a rad-dish!
These radishes are to die for. When you dip these perfectly roasted radishes into
the creamy chive butter they take on a salty caramel-like flavour. Whenever we make these family attack them like Americans attack Black Friday. They are gone in under 3 minutes.
Ingredients

- 2 bunches of radishes (about 1½ pounds total) with stems cut to about 1 inch, cut in half lengthwise
- 1½ Tbsp extra virgin olive oil
- ¼ tsp kosher salt
- 4 Tbsp (1 stick) salted butter
- 2 Tbsp chopped fresh chives
Instructions

Preheat the oven to 450°F. Line a baking sheet with aluminum foil or parchment paper.

Place the radishes in a large bowl and toss together with the olive oil and salt. Arrange them in a single layer on the pan. Place the butter and chives in a ramekin on the pan.
Roast them until browned and tender and the butter is quite bubbly, 30 to 45 minutes. Serve the radishes warm and dip them in the chive butter.
