Okra Fries

Go loca for okra!

Okra is crazy. Okra is fuzzy on the outside but slimy and slick on the inside. This recipe is a fun alternative to oven baked fries.

Ingredients

1 pound okra (20-25), split or                   

  quartered lengthwise

- 2 Tbsp extra-virgin olive oil

- 2 tsp ground coriander 

- 1 tsp salt 

- ¼ tsp ground pepper 

Instructions
​

Preheat oven to 400°F. In a medium bowl, toss the okra with the vegetable oil, coriander , salt and pepper. Spread okra out on a large baking pan or two if necessary. The okra should have plenty of room to spread out. They will steam instead of roast if they are piled on each other. Put pan in oven. After 10 minutes, toss the okra gently with a spatula and rotate the pans if you have two. Cook for an additional 10-15 minutes. When done they will be crispy and browned. Serve warm or at room temperature.
